The one with the radishes

Here's a quick and healthy idea for a side dish. It's super easy and perfect when you're in a bit of a hurry. What you'll need:

  • 1 avocado
  • 1 cup of cherry tomatoes
  • 1 cup of radishes
  • 1 tablespoon of chopped cashew nuts
  • 2 tablespoons of good quality olive oil
  • 1 tablespoon of freshly squeezed lemon juice
  • salt and pepper, as much as you like

Chop, mix, and eat! Enjoy! Over here you can find more recipes, feel free to share some of your own favourites in the comment section below. I've been in some sort of a cooking rut lately, so I would be more than happy to get some inspiration and get to know what your favourite dishes are!

  1. Delicious, especially with the cashews!

  2. Oh yum! I would love this one. Nuts are such a delicious way to add protein to a salad. I have been making some tasty ones lately. Today was a curried quinoa salad. I need to blog about some of them!

  3. This sounds good, and healthy to boot:) Thanks for sharing, Marieken. And TBH, during the summer, I don't like cooking much, so recipes like this are so helpful to have

  4. I love that you put your recipes on a page together - thank you! (That marble cake looks so good!)

  5. Looks like a tasty treat. (I'd have to leave out the radishes

  6. Sounds totally delicious and healthy. Kisses, darling

  7. I *love* this type of salad. I do a similar one with cucumber, I like the idea of throwing in the radish, too.

  8. mmmm....looks so yummy, love the colours!
