Here's a quick and healthy idea for a side dish. It's super easy and perfect when you're in a bit of a hurry. What you'll need:
- 1 avocado
- 1 cup of cherry tomatoes
- 1 cup of radishes
- 1 tablespoon of chopped cashew nuts
- 2 tablespoons of good quality olive oil
- 1 tablespoon of freshly squeezed lemon juice
- salt and pepper, as much as you like
